Instructions

  • Add all of your spices to a deep pot add 4 cups of water. Turn burner to medium high or to the setting that will bring the water to boiling. Allow water and spices to boil for 5 minutes.
  • After 5 minutes, turn off the heat. Let sit till completely cooked off. Then strain the liquid into a container, leaving back the spices in the pot. Repeat once more by adding 2-4 cups of water and placing it back to boil for 5 minutes.
  • Allow mauby "tea" to set a cool off completly before straining off any leftover liquid from the second round of boiling. Place in a container that closes with a lid and place in the fridge for 3 days or less for the flavors to age and become more potent.
  • After 3 days remove Mauby from the fridge and place in a large pot on low warm heat, add sugar and vanilla extract, stir slowly till sugar has dissolved completely, let the mauby drink cool off. By doing this we have made a Mauby concentrate.
  • Next, put the mauby concentrate in a gallon-size pitcher or dispenser, and add water to dilute the mauby concentrate. I usually add 1-2 liters of water but there are no exact measurements for how much water to add; it's about your sweetness preference. If you like it more sweet add less water or increase the cane sugar amount.
  • Mauby is best served with lots of ice in a tall glass. Trust me, your family will be begging for more after tasting this delicious island drink!

Notes

  • If your Mauby is too bitter use less Mauby bark when making tour concentrate. our taste buds are all different, I use 6 pieces of bark you may use 4 for the right taste for your family.
  • Your Mauby is weak and lacking flavor I suggest using less water , when diluting your mauby xoncentrate.
  • It's important to taste as you go along especially when adding sugar or any sweetener.
  • It's important to let your Mauby sit in the fridge to age for a few days because it will make the flavor more potent.
  • Shaking up your mauby is important the foam for proper distribution of flavor.
